Caviar of mapple syrup

Ingredient:

4 gram of Agar-agar
150 gram of mapple syrup
100 gram of water
1 liter of cold canola oil (freezer)

Weigh the mapple syrup,

the water,

and the 4 gram of Agar-agar.

Boil mapple syrup and water.

Mix the Agar-agar.

With a syringe, take the hot mixture and poor in drop by drop into cold oil.

Place the oil in a colander
to get the little boil obtained
(caviar mapple syrup).

Rinse with warm water to remove excess oil and let drain.
